Chocolate Covered Peanut Butter Balls
As a young girl, Christmas time was a special time filled with traditions at our house. One of my favorite things was spending the afternoon with my grandmother making peanut butter balls. After she passed away I continued the tradition and now my girls are helping me.
Chocolate Covered Peanut Butter Balls
1 cup peanut butter
1 cup butter
1 lb. confectioners sugar, sifted
2 cups graham cracker crumbs
1 cup coconut
1 cup chopped walnuts or pecans
1 24 oz. chocolate chips
Melt butter and peanut butter in medium saucepan. Once melted add confectioners sugar. Transfer mixture to a large mixing bowl. Add graham crackers, coconut, and nuts to mixture. After mixing all the ingredients together, mixture should form soft balls.
Roll into 1" balls and place on a cookie sheet.
In a double boiler melt chocolate chips. Once melted drop peanut butter balls into chocolate and roll around until completely covered. Place on wax paper. Allow to harden before storing.
Makes about 80 peanut butter balls
